This salad is great to make if you know you will have a busy week. It is so easy to pull together and if you add some cooked chicken, salmon or tuna, you’ll have a hearty lunch time meal! It will keep a few days in the fridge and is great as a cold side dish when it’s hot outside. You can also vary the ingredients by adding things that you like: tomatoes, leftover corn from corn on the cob, the possibilities are endless! Here is a very easy soup, perfect for a fall day. You can put this together in a flash, it is low in calories, and can be made pareve (neutral for meat or milk dishes). The real time saver here is using pre-peeled and pre-cut butternut squash. I always keep a few cans of Kosher chicken consume on hand. It’s delicious and perfectly seasoned. Lemon Vinaigrette Dressing – A Multi-Tasker

This Lemon Vinaigrette Dressing is a multi-tasker. You can add different seasonings and/or different herbs. Here I added roasted salmon with veggies to the “luchshen” (noodles), tossed with a few tablespoons of the dressing and in no time I had a complete meal. Sometimes I add sliced black olives or grilled chicken or I change up the veggies (I cook them with the noodles to save time). Change up the herbs if you like. You can use the dressing in a cold potato salad, rice salad, or quinoa salad which is perfect for cookouts and BBQs. Experiment and have fun.
