With Purim starting tonight, I wanted to pay tribute to our beloved Queen Esther, the heroine of the Purim story and a great role model. It is said that she did not eat meat, only vegetables and legumes. These lentil patties are delicious and healthy and you can put them together quickly. They will be the stars of your Purim feast. Serve them with the roasted red pepper mayonnaise (listed below) and everyone will want your recipe. Just in time for the Seder, here is the easiest dish ever! A what a crowd pleaser! I will be serving this at my Seder this year. Serve over potatoes or quinoa, it makes its own gravy. I made up this dish years ago when I was a college student in Israel. In those days, my focus was on making something quick but this also happens to be a healthy dish.You can make it from start to finish in about eight minutes! Perfect for when you come home, don’t know what to make for lunch or dinner and just want something that doesn’t take a lot of time. This recipe is for one or two people, but you could certainly change up the quantities. You can also season the zucchini with your favorite herbs. If you are not a fan of eggs, don’t worry, just omit them – you can make the zucchini as a delicious side dish. Enjoy!
