Fried Bananas for Chanukkah
Here is a quick and easy dessert for Chanukkah and also healthy! You can make this with graham cracker crumbs and/or shredded coconut. I make this gluten-free using gluten-free graham cracker crumbs. (Coconut is naturally gluten-free). This is the perfect ending to your Chanukkah feast. Young children will enjoy getting the banana slices ready for frying. An added bonus: the coconut oil leaves a wonderful scent in the house! Happy Chanukkah, Chag Chanukkah Sameach!
(Serves 4-6 people)
4 bananas, peeled and sliced into ½” pieces
Juice from one orange, pulp strained or ½ cup orange juice
½ tsp. cinnamon
1 cup graham cracker crumbs or gluten-free graham cracker crumbs
1 cup unsweetened shredded coconut
2-3 Tbls. Coconut oil for frying
1. Lay out 3 plates or 3 sheets of wax paper; place orange juice in a bowl; on each plate/wax paper with cinnamon, graham cracker crumbs and coconut, respectively.
2.Take a slice of banana and dip in orange juice; then dip in cinnamon on both sides, then dip in either graham crumbs or coconut. Repeat until all banana slices are covered and ready to fry.
3.Heat coconut oil on medium-high heat in frying pan; lay banana slices in frying pan, making sure not to overcrowd; cook about 2 minutes on each side or until golden brown. Flip slices to other side until golden brown; drain on paper towels.
1.To make graham cracker crumbs, place graham crackers in a plastic zipper bag, seal and roll with a rolling pin over the bag. Easy!
2.These can be served warm or cold. I like to make them about an hour before serving because it leaves a wonderful coconut smell in the kitchen!
