This hear, at my Rosh Hashanah table, I will be serving this delicious, easy Lemon Broccoli Salad. I love it because it is a nice change from the standard lettuce salad, you can assemble it quickly and it looks beautiful. Experiment with the ingredients. It is perfect summertime gatherings or holiday meals. It is sure to be a favorite go-to recipe. Shana Tova, Chag Sameach!
1 small head broccoli, broken into florets
Handful of cherry tomatoes
Few tablespoons sliced black olives
1-2 logs hearts of palm (optional)
- In microwave-safe dish with cover, microwave broccoli florets in 2-3 Tbls. water; Cook for 4-5 minutes until broccoli is slightly tender; drain then place in dish with cold water and ice cubes (to retain green color). After a few minutes drain and place on a serving plate.
- Top broccoli with cherry tomatoes, black olive and hearts of palm.
- Drizzle with “Lemon Vinaigrette Dressing – A Multi-Tasker” (found on this website); Place in fridge for at least an hour to allow flavors to develop. Serve cold.
