Happy Chanukah! Chag Chanukah Sameach!
2 large zucchini, ends removed
1 egg white, beaten with a few drops of water
Salt, other seasonings (optional)
1 cup Cornflake crumbs (gluten-free) or bread crumbs
- Preheat oven to 425 ° F. On cutting board, cut each zucchini in half length wise, then cut each half into half, resulting in logs that are about ½ inch width. Season logs with salt and any other seasonings that you like i.e. a shake of garlic powder, oregano, basil, paprika.
- Heat about ½ cup olive oil in frying pan over medium-high heat, until hot. In small shallow bowl, beat egg white with few drops water; in a separate small plate place cornflake or bread crumbs, adding more if needed. Dip logs in egg white, then in crumbs, then place in frying pan.
- Cook until golden brown, turning occasionally (about 5 minutes); drain on paper towel for a minute or two; place on baking sheet and bake for 10-12 minutes until slightly tender.
Serve with Roasted Red Pepper Dipping Sauce (Pareve):
In food processor, combine ¼ cup mayonnaise and ½ 12 oz. jar of roasted red peppers (drained). Great dipping sauce and as a spread on sandwiches!
