Fried Zucchini Logs For Chanukah or Anytime

These easy and delicious zucchini treats are perfect to serve on Chanukah or at anytime. They are so easy to make and a good way to get your veggies! They are perfect for dipping (see Roasted Red Pepper dipping sauce below) and make a great pareve appetizer. You can even make them gluten-free!

2 large zucchini, ends removed

1 egg white, beaten with a few drops of water

Salt, other seasonings (optional)

1 cup Cornflake crumbs (gluten-free) or bread crumbs

Olive oil


  1. Preheat oven to 425 ° F. On cutting board, cut each zucchini in half length wise, then cut each half into half, resulting in logs that are about ½ inch width. Season logs with salt and any other seasonings that you like i.e. a shake of garlic powder, oregano, basil, paprika.
  2. Heat about ½ cup olive oil in frying pan over medium-high heat, until hot. In small shallow bowl, beat egg white with few drops water; in a separate small plate place cornflake or bread crumbs, adding more if needed. Dip logs in egg white, then in crumbs, then place in frying pan.
  3. Cook until golden brown, turning occasionally (about 5 minutes); drain on paper towel for a minute or two; place on baking sheet and bake for 10-12 minutes until slightly tender.

Serve with Roasted Red Pepper Dipping Sauce (Pareve):

In food processor, combine ¼ cup mayonnaise and ½ 12 oz. jar of roasted red peppers (drained). Great dipping sauce and as a spread on sandwiches!
