Colorful Rice Salad

Just in time for the 4th of July, here is an easy, delicious and beautiful salad that you can bring to a BBQ, celebration or just have it anytime during the summer. It has a very delicate flavor and everyone will want the recipe. It is based on one that I found in an old Hadassah cookbook from Rochester New York submitted by H. Stoler. 

Ingredients:

Dressing:

3 Tbls. bottled Italian Salad Dressing

1 Tbls. mayonnaise

Salad:

2 cups cooked white rice, cooled (can substitute brown rice)

½ package (10 oz.) frozen chopped broccoli, cooked and cooled

1 ½ Tbls. chopped fresh parsley

1 ½ Tbls. chopped scallions, including green parts

¾ cup cherry tomatoes, yellow, red or combination, halved

Salt to taste

Method:

  1. Mix Italian salad dressing and mayonnaise together in a small bowl; set aside.
  2. In a medium bowl, combine all salad ingredients: rice, chopped broccoli, parsley, scallions and tomatoes; add dressing and mix well.

Beautiful, delicious and easy!
