Just in time for the Seder, here is the easiest dish ever! A what a crowd pleaser! I will be serving this at my Seder this year. Serve over potatoes or quinoa, it makes its own gravy. Make this and you’ll have plenty of time to enjoy the Seder. It’s a very low-calorie option as well. Have a great Passover, Chag Sameach!
5- 6 pieces boneless, skinless chicken breast
1 14.5 oz. can diced tomatoes
8 oz. marinated mushrooms in garlic (I use ½ a 16 oz. bottle), using several tablespoons of the juice
6 oz. marinated artichokes (I use ½ a 12 oz. jar), using half of the juice
6 oz. roasted red peppers, (I use ½ a 12 oz. jar), cut into large pieces, using half of the juice
½ a 5.75 oz. jar green stuffed olives
- Preheat oven to 350° F; place chicken in 9X13” baking pan. Add remaining ingredients and cover with aluminum foil.
- Bake for 1 hour. Serve over mashed potatoes or quinoa.
Tip: You can double or triple the quantities. I like to cut each breast in half for the Seder so that guests can also enjoy brisket and other yummy dishes.
