What an easy summertime salad! You can make this in five minutes or less and it’s so refreshing. This is also delicious served at a brunch gathering. It contains dairy so bear in mind if keeping Kosher.
Ingredients: Makes 2-3 servings
4 oz. (about ½ cup) cherry size fresh mozzarella balls
About ½ cup of cherry size yellow or red tomatoes
1 small ripe avocado, cut into small chucks about the size of the tomatoes and mozzarella balls
1 Tbls. olive oil
½ Tbls. white balsamic vinegar
Just under ¼ tsp. salt
- Place mozzarella balls, tomatoes and avocado chunks in a bowl; (you should have equal parts of all three, just eyeball it)
- Mix above with olive oil, white balsamic vinegar, salt and toss together.
Tip: You can sprinkle chopped chives on top to give it added flavor and color. Tuna would be great in this dish. Another delicious addition are whole, pitted or sliced olives.
