I made up this dish years ago when I was a college student in Israel. In those days, my focus was on making something quick but this also happens to be a healthy dish.You can make it from start to finish in about eight minutes! Perfect for when you come home, don’t know what to make for lunch or dinner and just want something that doesn’t take a lot of time. This recipe is for one or two people, but you could certainly change up the quantities. You can also season the zucchini with your favorite herbs. If you are not a fan of eggs, don’t worry, just omit them – you can make the zucchini as a delicious side dish. Enjoy!
2 small- medium zucchinis or ½ large zucchini
1 ½ Tbls. olive oil
1 or 2 eggs
¼ tsp. salt or to taste
- Slice zucchini into rounds about ¼ inch thick; heat olive oil in non-stick frying pan on medium high; add zucchini. Lay zucchini out flat, trying not to overlap. Cook for about 2 minutes then sprinkle with salt.
- Continue cooking another 3 minutes or until slightly browned on undersides; flip over and continue cooking, adding an egg or two after about 2 minutes. Cover and wait till egg is cooked through( 1 or 2 minutes). Total cook time about 8 minutes! Serve with some fresh multi-grain bread and you have a delicious and quick meal!
