Sheryl’s Summer Salad

This unbelievably delicious and simple salad was served by a family member, Sheryl, at a recent family gathering. You can put this together in five minutes and everyone will want the recipe! It looks beautiful and is a great offering at a summer cookout or get together. Enjoy!

Ingredients:

2 cups assorted colored grape/cherry tomatoes, halved

¼ cup frozen corn

¼ cup sliced scallions

1 Tbls. olive oil

Almost 1 Tbls. lime juice

Salt and pepper to taste

Method:

  1. Microwave corn in a small bowl for 2 minutes then rinse under cold water; drain.
  2. In medium bowl combine corn, halved tomatoes scallions, olive oil, salt and pepper. Mix well. Adjust seasonings if needed.

Tips:

  • This salad makes a small amount for about three people. Can be doubled or tripled for a larger crowd.
  • Great add-ins: sliced black olives, cubed feta, mozzarella or ricotta salata cheeses.
