Lemon Vinaigrette Dressing – A Multi-Tasker

This Lemon Vinaigrette Dressing is a multi-tasker. You can add different seasonings and/or different herbs. Here I added roasted salmon with veggies to the “luchshen” (noodles), tossed with a few tablespoons of the dressing and in no time I had a complete meal. Sometimes I add sliced black olives or grilled chicken or I change up the veggies (I cook them with the noodles to save time). Change up the herbs if you like. You can use the dressing in a cold potato salad, rice salad, or quinoa salad which is perfect for cookouts and BBQs. Experiment and have fun.

Lemon Vinaigrette Dressing over Veggie Noodles (Luchshen)

Ingredients:

4 Tbls. olive oil

2 Tbls. lemon juice

½ tsp. salt

½ – ¾ tsp. sugar (to taste)

1 Tbls. fresh chopped chives

Method:

Using a whisk, gradually add olive oil to lemon juice until mixture emulsifies (becomes cloudy). Add in rest of seasonings and chives (you can use other herbs, experiment!)
