On the holiday of Shavuot, also known as the “Festival of Weeks” and “Festival of the First Fruits”, it is customary to eat dairy foods. Here is the perfect cheesecake recipe that is so simple, you can make it even at the last minute. I use a food processor which is a great time-saver. It’s perfect for entertaining and everyone will want seconds! Chag Sameach! (Have a wonderful holiday!)
Crust & Topping:
1/3 cup butter, softened
½ cup brown sugar (or 6 Tbls. if you like less sweet)
1 cup flour
½ cup chopped, toasted nuts (slivered almonds or other nut)
½ cup sugar
8 oz. reduced fat cream cheese (I use Neufchatel)
1 egg or ¼ egg substitute
2 Tbls. milk
1 Tbls. lemon juice
½ tsp. vanilla
- Preheat oven to 350°F; in food processor, process brown sugar and butter until well combined; add flour and nuts and continue to process for a few more pulses, until crumbly but nuts are still coarsely chopped.
- Reserving 1 cup for the topping; press remaining mixture into a greased and floured 8” pan, then bake for 10 minutes; cool for 15 minutes.
- Clean processor with a paper towel, also wiping blade; process sugar and cream cheese until smooth, then add egg, milk, lemon juice and vanilla. Spread on baked crust; sprinkle remaining 1 cup of crumbs on top. Bake for 25-27 minutes. When cool, cut into bars. Enjoy!
Can be made with a hand mixer instead of food processor.
