Just in time for Chanukkah…Here is a delicious and easy to make “Latke Topper” that you will find yourself making year round! It’s perfect to spread on latkes as a “Latke Topper”. It is dairy so you may need to serve it with a pareve or dairy meal for those who keep Kosher.
4 oz. package plain goat cheese
2 tsp. grated lemon zest
1 ½ – 2 Tbls. sun-dried tomatoes, chopped
1 tsp. fresh thyme, chopped
½ cup olive oil
Salt & pepper to taste
Sprinkling of capers (optional)
- Slice goat cheese; place slices side by side in a shallow container (no worries if they touch or if the goat cheese breaks apart!) Sprinkle lemon zest, sun-dried tomatoes, thyme, (capers if using) and salt and pepper over goat cheese. Pour olive oil over the cheese.
- Refrigerate for 2-6 hours (I’ve let it marinate more than a day and it was fine); Remove from refrigerator about 30-45minutes before serving to bring to room temperature. Serve on crostini as a Noshable or as a Latke Topper.
