“Latkes”, (potato pancakes) are one of the popular traditional foods served on Chanukkah. Latkes can serve as a base for many delicious toppings. I call them “Latke Toppers” and this one is quick and easy to make. It gives a nice tangy balance to the potato taste of the latke. 2 – 3 artichokes (from a can), drained and chopped
2 Tbls. plain Greek yogurt
2 Tbls. mayonnaise or light mayonnaise
1 – 2 Tbls. chopped parsley
- Mix all ingredients together in a bowl; chill for at least 30 minutes.
- Serve as a “topper” for latkes.
