This is the perfect dish to serve on Sukkot. One of the themes of Sukkot is celebrating the harvest. This recipe has lots of vegetables, use any that you have on hand. It cooks up in a flash, my family loved it! It will be your “go to” quick recipe on Sukkot or anytime during the year. You can serve it over rice, noodles, mashed potatoes, quinoa or other favorite grains. Chag Sameach, have a Happy Sukkot!
1 lb. of chicken tenders
1-2 Tbls. flour
2 Tbls. olive oil
5-6 sprigs of thyme, leaves removed
3-4 carrots cut into small rounds
1 yellow squash, cut into small pieces
5-6 Crimini mushrooms, sliced
½ onion, diced
½ red or green pepper, cut into small pieces
¾ cup chicken stock
½ cup white wine
2-3 cloves of garlic, sliced into thin pieces
½ tsp. salt (or more if needed)
- Heat olive oil on medium high heat in a large frying or sauté pan; add in onion, garlic, pepper, squash and carrots; sauté for about 5 minutes, stirring once. Add in mushrooms and continue cooking for another minute.
- Push vegetable to the side of the pan and add in chicken tenders (lightly seasoned with salt). Cook for about 5 minutes until flipping over after half the time. Sprinkle flour over chicken and vegetables and cook for 2 minutes. Add in wine and thyme leaves, cooking for 3 minutes and then add in stock, stirring to remove any bits stuck to the bottom of the pan.
- Cook for another 6-7 minutes or until the carrots and other vegetables are tender. Adjust seasonings. Serve over rice or noodles.
