Green Bean Casserole Latkes

Green Bean Casserole LatkesThese are so easy and will “wow” your Thanksgivukkah crowd: all the wonderful tastes of the beloved green bean casserole rolled into a latke!! Also, no Cream of Mushroom soup involved so it can be eaten with a meat meal.

Ingredients:                                                           Makes 6-7 small latkes

½ package French cut frozen green beans

2 Tbls. water

1 cup fresh mushrooms, roughly chopped

1 Tbls. olive oil

3 Tbls. matzo meal

1 Tbls. golden mushroom soup

¼ tsp. garlic powder

¼ tsp. onion powder

½ tsp. salt

1 egg or ¼ tsp. egg substitute

1 cup French Fried Onions (French’s), crushed

Olive oil for frying


  1. Place green beans with 2 Tbls. water in covered microwave safe dish and microwave for 10-11 minutes; drain.
  2. Sauté mushrooms in 1 Tbls. olive oil in frying pan on medium high heat for about 2 minutes until golden brown.
  3. In mixing bowl, place green beans, sautéed mushrooms and remaining ingredients except French Fried Onions. Form into small patties.
  4. Dip in crushed French fried onions (I crush them in my hands) and fry in 3 Tbls. olive oil heated on medium high heat. Fry until golden brown, 3 minutes or so per side.

Tip: You can easily double this recipe. Also, they can be made up to a day in advance and then reheated in a 350°F oven for 6-7 minutes or until hot.
