Easy Sweet Potato Latkes

Sweet Potato Latke1

This is such an easy Sweet Potato Latke recipe that you can make it in just a few minutes, even after you come home from work. I guarantee this is a “no patchke”, “no fuss” recipe. It’s perfect to serve for Thanksgivukkah this year or any year for a Chanukkah treat! 

Ingredients:                                                                      Makes 12- 14 Latkes

2 cups grated sweet potato

2 Tbls. grated onion

2 Tbls. flour

1 egg, beaten or ¼  cup egg substitute

½ tsp. salt

¼ tsp. cinnamon

¼ tsp.  Pumpkin pie spice

3 scallions, chopped

Olive oil or vegetable oil for frying

Method:

  1. Grate sweet potato in food processor or by hand; grate onion by hand, and combine in medium size mixing bowl.
  2. Add in remaining ingredients except oil.
  3. Heat 3-4 Tbls. oil in large frying pan on medium-high heat. Place heaping Tbls. of sweet potato mixture in hot oil, cook on each side until golden, 3-4 minutes. Drain on paper towels.

Tip:

You can keep the latkes warm in a 325°F oven until you are ready to serve.
