Lemon Chive Vinaigrette

Just in time for the Rosh Hashanah feast, here is a great dressing that is so easy it will take you only five minutes to prepare. You can use on to dress your salad, over cold poached salmon or as a dressing over hot potatoes. I will be serving it this year drizzled over a plate of mixed greens as a light salad to accompany the many festive dishes.


2 Tbls. white wine vinegar

1/8 -¼ tsp. salt

½ Tsp. lemon juice

½ Tsp. Dijon mustard

½-1 Tsp. honey

¼ chopped fresh chives

6 Tbls. olive oil


  1. In mixing bowl, whisk first 5 ingredients together.
  2. Add chives then oil. Continue whisking for a minute until thickened and combined.
