Great Chicken/Turkey Meatballs

These can be made as an appetizer (Noshable) or as a main meal with your favorite sauce.


1 lb. ground chicken or turkey

1 egg white or ¼ cup egg substitute

¼ cup Italian bread crumbs

2 Tbls. tomato paste

2 Tbls. water

¼ – ½ tsp. salt

¼ tsp. garlic powder

1-2 Tbls. chopped parsley

Olive oil


  1. Mix all ingredients well in a mixing bowl; form into small or medium size meatballs. (Add a bit more breadcrumbs if mixture is too moist.)
  2. Brown on all sides in a few tablespoons of olive oil; add to your favorite sauce or continue baking in a 350 degree oven for another 15 minutes or until meat no longer pink inside.


  • Great with your favorite sauce or to Quick Mediterranean Chicken with Olives.
  • Great as an appetizer – a “Noshable”, paired with a dipping sauce
