Here is another great pareve dip that would be great to serve at Rosh Hashanah or at any time!
1 large ripe avocado, mashed
5-6 grape tomatoes
½ large scallion (including green part), chopped
5-6 Kalamata olives, pitted and chopped
Juice of ½ lime or lemon
Salt and pepper to taste
- Combine all ingredients in a bowl; serve with tortilla chips, crackers or cut up veggies.
- If not serving immediately, slice the other half of the lime or lemon and lay on top of dip in bowl (will prevent avocado from turning brown). Cover with plastic.
- To ripen an avocado, place in a brown bag at room temperature for several days.
- Double or triple the recipe for larger quantities.
