16 oz. bag of medium egg noodles or yolk free noodles
1 stick margarine (pareve for pareve kugel)
1 can of peaches (drained and chopped into large chunks) packed in juice
I large can crushed pineapple packed in juice (drain)
1 cup of sugar
4 eggs or 1 cup egg substitute
- Preheat oven to 350 degrees. Boil noodles for 7 minutes, drain. Return noodles to pot. Put stick of margarine inside the hot noodles to melt. Beat 4 eggs( or 1 cup egg substitute) in a small bowl. Mix in sugar. Set aside.
- Once margarine is melted and mixed through the noodles, add canned fruit (drained and chopped) to the noodles to cool them down. Add egg and sugar mixture to noodles and stir. Pour into greased glass baking dish.
- Bake at 350 degrees for 45 to 60 minutes depending on oven. Some of the top noodles will get dark brown and crispy. If this is not desired, throw a piece of foil on the top of the dish once the kugel is sufficiently golden on top.
To reheat, bake at 300 degrees for 20 to 30 minutes, with piece of foil on
top of the kugel so that the top doesn’t get too crispy.
