*”Leo” fondly refers to lox, eggs and onions
4 hard boiled eggs
1 tsp. Dijon mustard
2 tsp. mayonnaise
Pinch of salt
1 ½ ¬- 2 Tbls. finely chopped scallions (green parts)
Few slices of smoked salmon (lox)
Few capers, drained for decoration
1. Cut eggs in half; set aside whites.
2. Place yolks in small bowl, mash and add next four ingredients.
3. Place mixture in zipper storage bag, pushing mixture to one corner; snip of corner with scissors. Pipe mixture back into egg whites. Place 2 capers on each egg half and a small piece of smoked salmon.
